spaghetti squash with arugula pesto

Tonight I stopped by Trader Joe's to pick up groceries for the week and was very proud to only have spent $61. My total is usually much higher than that but I always strive for $50-60. That being said, I do pack my lunches which saves me mucho moolah so I never feel too bad.

I have an extra special lunch planned for tomorrow. I had leftover arugula and parmesan cheese so, naturally, I whipped up some arugula pesto in my new food processor! I am pairing it with some spaghetti squash and cooked chicken for a light and healthy lunch tomorrow.













This arugula pesto recipe is pretty darn delicious. I didn't even season it with salt or pepper. I do believe it called for too much garbanzo beans. It was arugula hummus until i doubled my arugula and olive oil portions. Perhaps my arugula was too loosely packed, another reason why I need a kitchen scale, right?

I had a Trader Joe's goat cheese pizza for dinner but, of course, I had to give this a try! Mmmm...




VEGAS, BABYYYYY!!! 

This last weekend, I went to Vegas with Matt and a couple friends. Matt and I go almost every month and it's usually with his friends but this time I invited my friends Natalie and Lilia. Lilia had never been, so it was great showing her around!









When the "Passion Pool" at the Planet Hollywood hotel ended up being a concrete lot with lawn chairs, we waltzed across the street where we sipped pina coladas in the gorgeous sprawling pool at Caesar's. At night we did it up right hitting up a club at the new Aria hotel as well as Tao nightclub where they let us into the VIP section and gave us a free table. During the day, we were high rollers, spending our time at the penny slots for our free drinks. Lilia even won $7!!!

On a side note, how gorgeous is the dress Natalie (left) is wearing in the bottom picture. A high roller bought it for her mother in Vegas in the 1980's and now it's come full circle. I love the story behind it!

And there was a momentous happening this weekend...
